| Shock frozen meals can be kept in the freezer for months at –18°C. In view of the quickness of the chilling (and freezing) process, there is no time for the frozen goods to form larger ice crystals as it is the case in the conventional freezing process. In contrary the single water molecules freeze separately (micro-crystals). In this way, the moisture will be retained in the frozen goods, even during defrosting. Weight, vitamins, and color pigments of the food will be kept intact. | ||||||||||||||||
